Basil Tortellini Soup

This is a light and delicious dish! Very easy to make and extremely inexpensive.

4 1/2 cups of broth (any kind- I use chicken)

9 oz refriderated cheese tortellini

15 oz. white kidney or cannelloni beans, drained and rinsed

14 oz. diced tomatoes

1 T. basil (dried)

1 T. balsamic vinegar

1/4 t. salt (or skip it)

1/8 t. pepper

1/3 c. parmesan cheese

Combine everything except parm cheese. If desired, add more balsamic vinegar and pepper for a stronger flavor. Boil and simmer according to tortellini package. Serve with parm cheese.
